Sweet Potato Pie Smoothie has all the warm flavors of fall with a refreshingly sweet and healthy twist on the typical pie cravings.
When it comes to making a favorite recipe, usually there’s a non-food memory associated with that recipe that makes it my favorite. Homemade pizza brings back memories of my childhood, making and eating pizza every Friday night with my brother, parents, and friends. Sunday gravy brings back memories of soccer Sunday’s, followed by a big plate of pasta and meat sauce shared with my family. Sweet potato pie smoothie? Well that’s not really a memory for me. But it is for Joey… and I’m here to share the memory for him. Smoothies are one of Joey’s favorite foods not just because he thinks they taste great, he knows when that blender starts working it means quality time with Dad. Smoothie time = Dad + Joey time!
It’s no secret I’m not a big breakfast eater. But Ted and the boys are, which is fine by me! Every Sunday the guys pick out the fresh and frozen fruits and veggies they want for the week of smoothies ahead. Once Monday morning hits, the routine begins. I usually stay far away from the morning man time [in the kitchen which is cute in itself], but this morning I weaseled my way into the man cave and surprised both guys with this sweet potato pie smoothie. Sweet potato in a smoothie? I didn’t tell them until after the fact…
You know the traditional sweet potato pie, casserole, or bake that shows it’s face during the holidays? Yes, I love it too. THIS smoothie tastes just as good and sweet, but without all the calories and fat and marshmallow topping. Don’t tell Joey he’s missing out on marshmallow topping please… And believe it or not, I enjoyed this smoothie with the guys. Ted will tell you it’s a rarity and usually I’m just slurping my coffee while they slurp their smoothies! But there’s just something about smoothie time for Joey and Ted that I’ve seen over the past two years that makes me stomaching breakfast every now and again worth it.
- 1 medium-sized sweet potato, cooked
- 1 medium-sized banana, peeled
- 2 cups fat-free milk
- ¼ cup Greek yogurt, vanilla flavored
- 1 tablespoon honey
- ¼ teaspoon cinnamon
- ½ cup ice
- Add all ingredients into your blender. Cover; blend on high for about one minute or until smooth.
- Serve immediately.
