This Elvis Hummus Breakfast Toast has all of the ingredients the king of rock n’ roll would love, plus a few extra healthy ingredients you can’t pass up.
Whether it was VH1’s Behind the Music special or a documentary on CNN, I’ve always been entranced by Elvis, his eating habits, and of course, his music. So, when Sabra asked me to create a hummus breakfast toast, my mind immediately went to Elvis’s preference for peanut butter, banana, and bacon sandwiches. But instead of the PB, I put one of my favorite protein toast toppers: hummus.
I’m almost positive I had, “I Can’t Help Falling in Love with You,” on repeat when I created and photographed this recipe. Seriously. Don’t knock it until you try it! The creamy hummus and salty bacon always go well together. Topped with sweet bananas and a drizzle of honey and voila! You have yourself one unique spin on breakfast toast.
Hummus is always a staple in our house- and for any meal of the day for that fact. While I’ve been on a hummus toast topped with hard boiled eggs for breakfast, the kids went wild for this Elvis inspired version. And you better believe Mom was just as excited as breakfast is one meal of the day I’m always pushing variety, nutrition, and of course, protein- which hummus is an excellent source of. Breakfast toast like this Elvis inspired version is the perfect way to get whole grains and protein- both of which provide these little bodies and brains to function to their fullest potential every day.
Move over avocado toast. Elvis is in the building! And I’d like to think he’d approve of the peanut butter hummus swap.
- 4 slices whole grain bread, toasted
- ½ cup Sabra Classic Hummus
- 1 large banana, sliced thin
- 4 strips of bacon, cooked and crumbled
- ¼ cup peanut butter, melted
- Top each slice of bread with 1-2 tablespoons of hummus. Add bananas slices and bacon crumbles evenly over each piece of toast.
- Drizzle with peanut butter. Eat immediately.
