I don’t know what it is about ground turkey lately or making big batches of turkey soup, for some reason I’ve been turning to turkey for meals beyond Thanksgiving. A part of me thinks it’s because ground meat is a. easy for the kids to grab and b. white meat always seems to go over well with their taste buds.

But I threw these reasons out the door when I made this particular soup spicy. No, the kids did NOT go hungry, they just enjoyed a batch of Bagel Bites while I gobbled up a few bowls of this southwestern turkey soup!

Yep, sometimes my kids eat a different meal than their parents. While I strive to serve the family ONE meal, no matter how it’s plated, I almost always find a night or two or three where we eat something different. And if that means I can enjoy a warm bowl of soup without interruptions well then, I’m doing it!

Why You’ll Love This Southern Turkey Soup

With all the flavors you’d find in a Tex-Mex meal, this southwestern turkey soup is packed with flavor. And if I didn’t add so much cayenne pepper, the kids would’ve for sure eaten a few pieces of sweet potato too. But for now, if serving your children, a different meal allows you to cozy up with a warm, spicy bowl of this southwestern turkey soup, THEN DO IT! I’m giving you permission.

If you aren’t a bean loving person like a lot of people in this family, then this recipe is for you! I used sweet potatoes to substitute my beans in this soup.

Serves: 4-6 servings
Ingredients
  • 2 tablespoons olive oil
  • 1 pound Ground Turkey
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper [optional]
  • 2 sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 2 large carrot sticks, diced
  • 1 medium yellow onion, diced
  • 4 cups chicken broth
  • Fresh cilantro and sour cream for serving
Instructions
  1. Heat oil in a large non-stick skillet over medium-high heat. Add turkey and break into crumbles, cooking through, about 7-10 minutes. Add seasonings and stir to combine with cooked turkey.
  2. Transfer seasoned turkey to slow cooker. Add remaining ingredients. Cover and cook on low for 6 hours or high for 4 hours.
  3. Serve immediately with chopped fresh cilantro and a dollop of sour cream.
