Heat oil in a large non-stick skillet over medium-high heat. Add turkey and break into crumbles, cooking through, about 7-10 minutes. Add seasonings and stir to combine with cooked turkey.
Transfer seasoned turkey to slow cooker. Add remaining ingredients. Cover and cook on low for 6 hours or high for 4 hours.
Serve immediately with chopped fresh cilantro and a dollop of sour cream.
