When it comes to eating during the holidays, I can count on one thing: I’ll rarely go hungry. Between the feasting on Thanksgiving, Christmas Eve, Christmas Day, and New Years Day, it’s no joke that I could easily eat my daily calorie requirements in one meal; and I know I’m not alone in this. Instead of feeling guilty or depriving myself of my favorite holiday foods, I make a conscious effort to watch what I eat other days during November and December. So that means when I’m tempted with leftovers, I have to find a way to NOT overfill my plate. Does that mean I pitch the leftovers? No, food waste is not allowed here. I find ways to make it healthy! Just like this turkey, cranberry and white cheddar sandwich!

Roasted turkey and cranberry sauce are some of the “lighter” options found on most holiday dinner tables, and the two pair perfectly with a mild white cheddar cheese. Add some fresh greens and wrap in a Flatout Flatbread, and you have yourself one filling meal that tastes like the holidays, but won’t leave you feeling so full like the main event typically does.

I love using Flatout Flatbread for all kinds of sandwiches [it’s the go-to lunch for me and the boys— I even pack a Flatout sandwich everyday for Ted for work]. While I used the Multigrain with Flax Flatbread for this sandwich, the Foldit’s is perfect for those of you who pack lunches everyday and the Light Original is great if you’re calorie conscious [like many of us are around the holidays]. So if you’re looking for a light and unique way to use leftover turkey and fixing’s this holiday season, grab your favorite Flatbread and make a sandwich! Just don’t forget the white cheddar cheese… Joey agreed it was his favorite part in this turkey, cranberry and white cheddar sandwich!

Serves: 1 sandwich
Ingredients
  • 1 Flatout Flatbread
  • 2 tablespoons cranberry sauce
  • 3 ounces turkey breast
  • 3 ounces white cheddar cheese, thinly sliced
  • ½ cup fresh leafy greens
Instructions
  1. On one rounded end of Flatout, layer cranberry sauce, turkey, white cheddar cheese, and spinach.
  2. Fold in half and enjoy! Or roll, and cut into pinwheel pieces for kids!
