I don’t know what it is about watermelon and being pregnant, but some crazy watermelon craving comes over me when I’ve got a baby in my uterus. And since that’s been the case the past three years, you better believe I’ve consumed enough watermelon to feed a small army. Summer or not, my boys have always gravitated towards the sweet, water-filled fruit as well. So when the idea for these watermelon popsicles came to mind I knew that if I perfected my recipe, we’d be enjoying watermelon popsicles for years to come! I wasn’t sure if I needed to do a formal post for these watermelon popsicles as I already shared the how-to for them on Instagram and in my recent 10 Homemade Popsicles for Summer blog post. But since I’m practically dreaming and bathing in watermelon right now [c/o my 36th week of pregnancy], I figured why not talk about them some more! While we are happy campers just snacking on a bowl filled with sliced watermelon, there’s something to be said about using it in other recipes. Like all fruit, watermelon is naturally sweet and makes a great dessert or snack. Next time you want to serve up a kid-pleasing and healthy dish, think watermelon!
