If you’re a fan of perusing food blogger accounts on Instagram, then chances are you’ve see some version of avocado toast in your daily feed. While my boys gobble up the closest bowl of sliced avocado or guacamole, they aren’t too keen on the trendy hempseed or runny egg topped avocado toast. But when Sabra asked if I’d be willing to try and create a kid-friendly recipe with their new Veggie Fusions guacamole, I knew I was going to give avocado toast another whirl and top it with something the boys already like… more fresh veggies! Trendy? Eh, in toddler world anything beyond Goldfish and Cheerios is trendy!

While I was prepping the boys’ veggie-packed avocado toast Anthony was climbing my leg to get a scoop of the guacamole. The kid gravitates toward avocados when he sees the green in the room! So I plopped him in his highchair and gave him a spoon + the Southwestern Veggie Fusion flavor and you know what? That made him happy! Joey and I looked at him like he was crazy… but alas, the things we do for our kids.

Now here’s the deal: I didn’t have to top the Veggie Fusion avocado toast with MORE veggies. Veggie Fusion guacamole is already made with plenty of them— fresh Hass avocados combined with 7 crisp vegetables depending on the flavor, making it one nutritious, fiber-filled dip. But since my guys love dipping fresh bell peppers in avocado and/or guacamole, it only made sense to add more of what they like to the guacamole mix with the hope of getting them to eat more! And you know what? It worked! Except Anthony still wanted to scoop the topping with a spoon. Whatever works my friends!

So if you’re like me and want your family to #VeggieUpYourGuac, be sure to pick up one of Sabra’s Veggie Fusions in the deli section at your local grocery store. And don’t be afraid to top your Veggie Fusion guacamole toast with something like that runny egg… that’s how I made mine! And that’s when that same crazy-eyed look came across the table from two toddlers looking like they just gave themselves a guacamole facial! Serves: 3-4 servings
Ingredients
  • ½ whole wheat baguette, sliced into 1-inch slices, toasted
  • 1 cup Sabra Veggie Fusions Garden Vegetable guacamole
  • ¼ cup red bell pepper, chopped
  • ¼ cup orange bell pepper, chopped
  • ¼ cup corn
Instructions
  1. Spread 1-2 tablespoons of guacamole on toasted baguette slices. Top with a mixture of bell peppers and corn.
  2. Serve immediately.
