A few years ago I shared 5 easy recipes using rotisserie chicken and since then I know I’m not the only one relying on one of my favorite store-bought shortcuts to help get dinner on the table. Winter sports are in full swing [tennis, basketball, and baseball clinics] and, well, this probably should’ve came before the mention of sports, but Mom’s putting schoolwork and reading AHEAD of iPad and sports time after school, so that means when dinner hits, I’M WIPED. And just as whiny as my four roommates. Hence why I’m throwing together another 5 rotisserie chicken meal ideas for each of us to benefit from. 

Making dinner tonight- and every night- really is that much easier with a cooked, rotisserie chicken. If, and I say if lightly, if you have the time and find yourself with a few extra chicken breasts or thighs on hand, you can totally pre-cook chicken, shred or cube the meat, and follow any one of these no-recipe meal ideas below. In fact, once upon a time I was know to make a batch of simple shredded chicken weekly. Then four kids, two jobs, and a whole lot of other things happened and I spend the extra money and time and voila! Pickup the $10 buck cluck at any nearby grocery store [Meijer, Kroger, Costco, Market Fresh, Market Square, Papa Joe’s, etc.].

So here it is my friends, 5 new no-recipe ideas from my recipe box using a rotisserie chicken! Again feel free to use your own “meat,” just make sure it’s cooked, cubed, or sliced ahead of time so you take advantage of these simple suppers!

GREEK CHICKEN SALAD: Toss shredded chicken, Roma tomatoes, olives, crumbled feta, and sliced green onion. Top on salad greens with a balsamic dressing.
 
CHICKEN AND HUMMUS PIZZA: Spread roasted red pepper hummus on prepared pizza shell or crust. Top with chicken, canned artichoke hearts, red bell pepper, and shredded mozzarella cheese. Bake until cheese has melted and top with a sprinkle of Parmesan cheese.
 
CHICKEN & VEGGIE STIR-FRY: Stir-fry a package of frozen Asian vegetables in peanut sauce until tender. Add chicken and stir to combine. Serve over rice and top with chopped peanuts.
 
CHICKEN TACOS: Heat cooked chicken + taco seasoning, salsa, and black beans in large skillet until heated through. Serve in tortilla shells and top with Monterrey Jack cheese, shredded lettuce, and sour cream.
 
CHICKEN & GUAC WRAPS: Spread guacamole on whole grain tortillas. Top with shredded chicken, shredded cheddar cheese, tomato slices, shredded lettuce, and thinly sliced apples [or cooked bacon is really good here too!]. Wrap tightly. Cut on a diagonal and serve.
