Baked Apple Chips

Baked apple chips make a nutritious and crunchy snack. All you need is two-ingredients, then slice, sprinkle with cinnamon, and bake!

Dried fruit seems to be a staple in our house. From raisins to dried blueberries to apple and banana chips, we have a pantry stocked with them.

While I don’t normally let the boys snack on a whole bowl of dried fruit, I do let them add some to homemade trail mix. That’s until I made our very own homemade baked apple chips. In just two ingredients and no added anything else, I’d like to think these are substitutes for some store-bought varieties.

The inspiration for testing out a batch of these baked apple chips were two big things: the first being that I’m packing preschool lunches this year [grab my preschool lunch ideas PDF] and the boys love something crunchy and sweet in their lunch box.

The second being the go-to fruit in our house for the past year or so has been apples. Apples dipped in peanut butter, apple slices by themselves, apples with cheese and hummus, the combinations have been endless.

Ok and the third thing that really inspired me to come up with a new preschool lunchbox recipe is something called #PowerYourLunchBox by my friends at Produce for Kids. You guys might recall I’m their official Registered Dietitian, so clearly I’m passionate about their projects and promotions.

If you take the Power Your Lunchbox Pledge, a collective $1 donation will be made to support Feeding America programs that benefit children and families for every pledge! I’ve taken the pledge for the past three years, and honestly, it takes 68 minutes less to take the pledge than it does to make this recipe [you’ll get it once you read the recipe instructions].
