If there is a recipe for apple peanut butter pie then I think I just recreated it in the easiest, most tasty way: Apple and Peanut Butter Sandwiches, served warm and open face!

There are foods we always have in our house that I know I can rely on in a pinch to make a simple meal or snack. That’s Michigan apples and peanut butter. But when you or your toddler want something a little more substantial, put the two together on top of a toasty English muffin and the result? Goodness. Whenever I bring out this recipe trio I seem to get a few high-fives and squeals from my crew.

This recipe is the perfect mix of protein, carbohydrates, and fiber, so that mean it doubles nicely as a main entrée [think preschool lunches or Mom’s lunch] or shareable snack. Similar to a lot of my recipes, meal plans, and snack ideas, this one is a no-brainer, and really doesn’t need a recipe to follow. But if you want to know the step-by-step Apple and Peanut Butter Sandwich recipe PLUS a look at what Michigan apple I used, head on over to the Michigan Apple Committee’s blog for the recipe!
