Why You’ll Love This Chicken Bacon Ranch Skillet

It’s no secret my family loves skillet meals. And I enjoy serving them when they are Mom’s everything but the kitchen sink style. Granted my style with skillet meals has definitely morphed with each of my children’s food preferences, but for the most part, any recipe with shredded chicken, bacon, shredded cheese, and ranch is a, “she’s done it again!” recipe from Anthony. So yes, I’m making this one a lot!

Preparation Tips to Consider

When I make recipes like this chicken bacon ranch skillet I either do one of 2 things for the chicken: 1. I buy a rotisserie chicken and shred the meat or 2. I make a batch of simple shredded chicken on the weekend and use it for recipes like this. Same goes for the bacon- it’s easy to include cooking bacon as part of your food prep, although I will say there’s something about everyone running to the dinner table when they smell bacon cooking on the skillet. With spring sports in full swing I definitely need quick meals in my dinner rotation, and this chicken bacon ranch skillet is one of them!

Serving Tips to Consider

For the most part, this is one of those make ahead [cooking the bacon and chicken ahead of time] and a throw together before serving meals. If you know my kids by now and how I’m deconstructing meals for them, then you’ve guessed Anthony ate the entire thing, Lily wanted spoonfuls of shredded cheese and bacon, Joey loved it all minus the ranch, and Michael asked for a bowl of cereal. I had mine as-is and had some sauteed spinach on the side. You could enjoy on top of a bed of rice, whole grain pasta, sandwich bread or hoagie,  or alongside any salad. We typically opt for cucumbers, peppers and MORE ranch for dipping. Yes, we are a ranch fam.

Serves: 4 servings
Ingredients
  • 2 tablespoons olive oil
  • 3 cups cooked shredded chicken
  • 1.5 cup cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • Ranch dressing for serving
Instructions
  1. Add oil to hot skillet. Add chicken, bacon and top with shredded cheese. Cover with lid and warm through until cheese has melted.
  2. Serve over your favorite whole grain rice or pasta, in between sandwich bread or rolls, or as-is with a side salad.
