I’m fairly picky when it comes to cooking with pork. I’ve never cooked a pork roast and I pretty much always overcook pork chops. But when pork tenderloin is on sale, Momma stocks up! From roasting to grilling to slow cooking, I’m all about the “other white meat.” Pork tenderloin is very lean and like chicken breasts it takes on the flavor of the sauce or other sides you pair it with. One Sunday when I was doing a batch of meal prep for the week ahead, I decided to change up taco night on the boys and try pulled pork tacos. Do you think they noticed?! They somehow notice whenever Mom leaves the room but they never complain with what meat I put between a tortilla or taco shell! Go figure!

I’m not sure if anyone else was as excited as me about the creation of a new recipe that could be made ahead and reheated before eating, but there were no complaints when I topped these pulled pork tacos with cheese and more salsa verde. I tried getting the crew to try their pulled pork tacos with cabbage and lime juice, but apparently that combo is too exquisite for toddler taste buds.

If you haven’t already skipped to the recipe, you might be surprised to learn that there are 3, yes 3 ingredients in this recipe. You could add some chopped onion and extra garlic to the slow cooker, but because good things happen in 3’s [or is it bad things?! Don’t tell me], I kept it simple and went with what I knew would be delicious. Serve with your favorite taco toppings and voila! Dinner on me!

Serves: 6-8 servings
Ingredients
  • For the pulled pork:
  • 2 pounds Pork Tenderloin
  • 2 teaspoons cumin
  • 1- 12 ounce jar salsa verde
  • Consider serving with:
  • Corn or flour tortillas
  • Salsa verde
  • Red onion, sliced
  • Avocado, sliced
  • Cabbage, shredded
  • Cheddar cheese, shredded
Instructions
  1. Cut the pork tenderloin into thirds. Add to slow cooker. Top with cumin and salsa.
  2. Cover and cook on low for about 6 hours. Shred with two forks.
  3. Serve with one or more of the toppings suggested above!
