An easy and healthy recipe for grilled sausage vegetable packets. A main-dish meal that everyone will enjoy!

Today’s recipe is brought to you by my intern, Hannah! Hannah is a dietetics student at Michigan State University [GO GREEN!] and she so kindly came up with this two-part post:

part 1- the recipe for grilled sausage vegetable packets and

An action-packed summer day filled with activities has a way of stirring up an appetite. On days like these, there is nothing more satisfying than a hearty dinner to refuel.

However, there is nothing more unappealing than heating up the oven on a 90-degree day. That is when I turn to my trusty friend, the grill.  

With the use of a little tin foil, preparing a hearty and nutritious dinner is as easy as 1,2,3. Creating foil packet meals, such as my favorite grilled sausage vegetable packets, requires little to no preparation. Each person can fill them to their liking and the cleanup is virtually non-existent.

At the end of the meal, everyone is left satisfied and I’m happy there isn’t a sink full of dishes to be done. Be sure to scroll down past the recipe for the basic how-to for foil packet meals!

Step 1: Protein- Chicken breasts, sausage links, and burger patties are some of my family’s favorites for foil packet meals. If you want to use ground meat, break the meat into crumbles before adding to the foil.

Step 2: Starch- Sweet or regular potatoes work best, cut into same-size pieces. You can also cook rice or pasta indoors while the foil packet meal cooks [or skip the starch completely].

Step 3: Vegetables- Washed, chopped, and sliced beforehand. You can even use frozen varieties!

Optional: Fresh or dried herbs, olive oil, and salt and pepper will add great flavor to your foil packet meal [and help the food not stick to the foil when it grills].

Directions: Place the ingredients on one side of a sheet of heavy-duty foil. Fold foil around ingredients and seal completely before placing them on the grill. Grill covered, over medium heat for about 20-25 minutes, depending on the meat and vegetables you use. Once the veggies are tender and the meat is cooked through they are ready to eat!

The key for a successful packet is making sure all the ingredients are uniform in size. This way, all components are thoroughly cooked around the same time. No one wants overcooked chicken and undercooked potatoes!

Serves: 4 servings
Ingredients
  • 1 pound Italian sausage, cut into ½ inch slices
  • 2 cups broccoli florets
  • 1 medium onion, cut into wedges
  • 1 bell pepper, sliced
  • 2 cups red skin potatoes, sliced in half
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic salt
  • ¼ cup olive oil
  • pinch of red pepper flakes
Instructions
  1. Preheat grill to medium heat. In a large mixing bowl, combine all ingredients and stir.
  2. Divide ingredients between two pieces of heavy-duty foil (about 14 in. x 12 in.). Fold foil around sausage mixture and seal tightly.
  3. Grill, covered, over medium heat for 25-30 minutes or until meat is no longer pink. Open foil carefully to allow steam to escape. Serve immediately.
