I’ve started roasting potatoes as part of my weekly food prep and let me tell you, it’s been a lifesaver as a fast side dish for an easy weeknight dinner! I’ll roast a batch on the weekend and then reheat them on the stovetop or microwave before serving. Now when the boys take to a recipe of mine, I slowly try to change-up one ingredient or two to expose them not only to new flavors, but I make sure these flavors are accompanied by a food they are accustomed to [in this case, the yumminess of roasted potatoes with olive oil]. That’s when I started adding paprika! For [you guessed it] paprika roasted potatoes!

While this recipe works with regular paprika, I kicked it up a notch by adding Spanish smoked paprika. I found this gem-of-a-spice this past weekend when the boys and I were grocery shopping at Kroger. Kroger is running a campaign right now called, “Taste of Spain,” where they are featuring special Spanish-themed products meant to reflect the diversity and variety of food Spain provides. To prepare for Taste of Spain, a team of Kroger food explorers met with more than 80 food producers in Spain traveling the region and searching for authentic, yet easy to execute meal items. From wine to cheese to olives and spices, there’s something for every palate and budget!

While I would have much rather grocery shopped and came home with a few bottles of Spanish wine, I compromised my pregnancy cravings with smoked paprika. This spice packs so much flavor, and is really versatile in whatever dish you choose to use it in. From a topping on white fish or pork chops, to soups, stews, or chili’s, or to the main flavor in these paprika roasted potatoes, you can’t go wrong picking up a bottle of it next time you are shopping.

Serves: 4-6 servings
Ingredients
  • 1 ½ pounds small potatoes, sliced in half
  • ½ yellow onion, cut into a large dice
  • 1 ½ teaspoons Spanish smoked paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 3 tablespoons extra virgin olive oil
Instructions
  1. Preheat oven to 425. Combine potatoes, onions, spices, and olive oil in a large resealable plastic bag. Shake the bag until the potatoes are evenly coated.
  2. Lightly brush a baking sheet with a thin layer of olive oil. Spread the potatoes evenly onto the sheet. Roast for about 25 minutes, stirring halfway through, until the potato pieces are cooked through.

    I JUST purchased smoked paprika for the first time this past week and already love it! And this post brings back fond memories of the time I spent in Spain while studying abroad!
