Kicking off another week with one of my trusty cooks once, dine twice, no-recipe recipes: slow cooker shredded beef. When I have the time to do a little bit of meal prep, I find myself making a batch of slow cooker shredded chicken OR beef to have for multiple meals throughout the week.
The best part about this slow cooker shredded beef? I can throw everything in the slow cooker and then get on with my day. While dinner is cooking, I can move forward with other things like laundry, cleaning, emails, showering, working out, etc. etc. etc. If you know, then you know, there are many things that can get done with the beef is slowly cooking away!
Slow Cooker Shredded Beef: What’s the Best Cut of Beef to Use?
You guys know I’m ALL IN when it comes to feeding my family beef. I like a good old chuck roast for this recipe. Or a shoulder roast like I used below. Just remember, if the roast name has “round” or “loin” in the name, it’s going to be a lean cut of beef. So it might need extra time to cook! Learn more about beef cuts here.
My Favorite Ways to Eat Slow Cooker Shredded Beef
You could eat the beef shredded, as-is, with roasted potatoes and baby carrots. You could eat the beef as a “filler” for quesadillas or tacos or nachos, or you could eat the beef with marinara sauce and pasta. I’m sure you could think of other ways to eat this slow cooker shredded beef, but that’s all I’ve got the energy for today. It’s back to college football replays, Sweet Magnolias on Netflix with I type type type away, and a few hours of me-time before I get pickup my buddies from school!
- 2 pounds beef shoulder roast
- 1 large onion, sliced
- 3 cloves garlic, minced
- ½ cup beef broth
- Salt and pepper
- Add ingredients to slow cooker. Cover and cook on low for 7-8 hours.
- Remove beef from slow cooker and shred with two forks. Add back to broth and onion mixture. Serve immediately or save for another recipe.
