Slow Cooker Creamy Chicken and Noodles

Kristy shared Healthy Snacks for Preschoolers last year on M2MN and was kind enough for a round two with you all—> except this time she’s sharing one of her favorite slow cooker recipes. I first want to say congrats to Katie and her family on the birth of their third child, baby girl Lily! Welcome to the land of being outnumbered at all times J Since I’m a mother of three young children (ages 5, 4 and 2) as well, I can relate on many levels…exhaustion and sleep deprivation being at the top of the list! It’s loads of fun and never ending craziness, but so rewarding all at the same time. So I’ve made this simple slow cooker creamy chicken and noodles recipe with Katie and her family in mind.

After I had each of my three children, the last thing I wanted to do was worry about dinner. With this recipe there is little prep work except for chopping vegetables which you can leave out if you want to make it even simpler. And then just about 30 minutes before it’s done, just boil some water and cook the noodles and you’ll have a delicious, simple meal your whole family will enjoy! At least two out of my three kids enjoyed it, so I call that a win-win!

You’ll notice that I used cream of chicken soup in this recipe. Yes, I sometimes use canned soup to save me TIME! I do enjoy making recipes without canned soups, however, you can’t beat the time saving aspect of these type of products. And when you’re short on time, a home cooked meal with a few canned goods included is still MUCH better than eating out!

Slow Cooker Creamy Chicken and Noodles

Recipe type: Main Dish
Serves: 4-6 servings
Ingredients
  • 1 ½ pounds frozen chicken tenderloins (or chicken breast)
  • 2 carrots, chopped
  • ½ large onion, chopped
  • 2 celery stalks, chopped
  • 3 teaspoons minced garlic
  • 1 can cream of chicken soup
  • 1 packet Italian dressing mix
  • 8 ounces cream cheese, softened
  • 8 ounces whole wheat egg noodles
Instructions
  1. To a slow cooker add chicken, vegetables, garlic, cream of chicken soup, and Italian dressing mix.
  2. Cook on low for 6 hours.
  3. Remove chicken and shred with two forks. Return chicken back to slow cooker.
  4. Add cream cheese and cook on low for another 30 minutes or until cream cheese is completely melted.
  5. Serve chicken over noodles.
