Sometimes I take a cue from my husband when it comes to my cooking, and you know what? He is usually spot on! When I made a big batch of these slow cooker chicken fajitas last week, I texted Ted asking him to pick up some tortillas on his way home from work. Because he’s fairly conscious on the amount and type of carbs he eats each week [notice I said week; on the weekend he can’t pass up my homemade pizza], he suggested we enjoy the fajita meat on Flatout Flatbread. - 4 Flatout Flatbreads
- 1 lb. boneless, skinless chicken breasts
- 1 ½ cups sliced bell peppers [about 1 large]
- 1 small onion, sliced
- 2 small tomatoes, sliced
- 1 ½ teaspoons cumin
- ½ teaspoon dried oregano
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- optional toppings: shredded lettuce, shredded cheese, sour cream, avocado, hot sauce
- Add chicken, vegetables, and seasoning to slow cooker. Cover and cook on low for 6 hours or high for 4 hours.
- Shred chicken with two forks and add back to slow cooker to keep warm until serving.
- To assemble, add fajita mixture to Flatout Flatbread. Top with you favorite fajita toppings, roll flatbread, and enjoy!
