PB & J Bites make a great grab-and-go snack to have on hand or stock your freezer with. Filled with the flavors of the traditional lunchtime sandwich but in a snack, bite-size!
I think I’ve established the extent to which snacking happens in my house. So today I’m stopping by to quickly share one of our new favorite snacks: PB & J Bites. Whether you consider these small-sized snacks balls or bites, I find they are the perfect hand-held snack for toddlers. Two served up with a sippy cup of milk or water and voila! You’ve got yourself a simple snack filled with whole grains, protein, and yes, SOME sugar. Which essentially is me saying I’m not perfect and let my kids have a little here and there… [which I fully admitted in another recent snacking post about no-added sugar snacks].
While I know many food bloggers and friends make batches of bites or balls each week as part of their weekly snacking food prep, I tend to go in spurts. Truth is, when I make snacks like these PB & J bites they usually only last a few days. The boys are good about portion control [thanks to Mom], but this Mom needs to take her own advice and eat a few at a time. Easier said than done when I’m enjoying them with a glass of red at the end of a long day.
Consider these the perfect post-nap, school pick-up, or post-practice snack—- if your kiddos can have nut butter. And I dare you to enjoy one or three with a glass of cabernet. Triple dog dare you!!!
- 1 cup old fashioned oats
- ½ cup peanut butter
- ¼ cup jelly [I used strawberry]
- 2 tablespoons chia seeds
- Add ingredients to food processor. Cover and pulse on high for 1 to 2 minutes, until the dough forms.
- Using a 1 tablespoon scooper, scoop out dough and then roll between your palms to form the bites.
- Store in an air-tight container in the refrigerator.

You could! You might need more PB. You could also add hemp seeds
