Mexican Layered Hummus Dip

Mexican Layered Hummus Dip is a take on on the traditional party favorite but the base is protein-packed hummus. Topped with colorful, nutritious ingredients, this dip makes a fast snack or flavorful appetizer for any party.

Snacking. When you look up the definition of toddler in the dictionary you might as well find the word snacking in it’s description. The big conundrum with any person- whether that be a toddler, teen, or senior snacking all the time is that appetite could be nonexistent for meals! But what do you do when dinner is 2 hours away and your toddler is pulling at your legs screaming for a snack?! Well, you do what any sane parent would do, you give in to their wishes and find a healthy, nutrient-rich snack that will provide some nutrition but not spoil their dinner. Am I describing the scene so eloquently?!

More often than not, our afternoon snack in the Serbinski house involves hummus! And silly faces.

Nutrition verbage and toddler meltdowns aside, there’s something to be said about the #UnofficialMeal— between meals— that gives us as a parents an opportunity to get one healthier food into our bellies or at least exposing our children to them. That’s when I turn to one of my favorite foods… and coincidentally, the bash bro’s favorite foods too: hummus. To be honest, I created this Mexican layered hummus dip when I was asked to bring an appetizer to a friend’s bachelorette party. But if you were to hangout with the boys and I anytime between 2:00pm and dinnertime, you would see many of the same ingredients in our afternoon snack.

I typically chop the topping for this hummus dip on the weekends so I can make the dip as the recipe calls for, or snack on it solo [or with eggs, in wraps, etc.] throughout the week.

What’s funny about kids and their eating habits is that when presented a plate or bowl of this Mexican layered hummus dip, my boys would turn their nose at it. But if presented with bell pepper strips and a container of Sabra hummus, I would have to peel their little hands away before finishing the container!

Kid’s version. Deconstructed. And their new favorite hummus: Sabra Roasted Red Pepper!
And sometimes I even put the topping on the side to nibble on...
And sometimes I even put the topping on the side to nibble on… Moms unofficial meal = baby’s too. Little sis is craving this combination a lot this pregnancy!

So before you so no to snacks between meals with fear it might ruin your child’s appetite. Rethink that “unofficial meal” or snack. What are your kids commonly asking for? What foods do you usually have on hand? And think about a new way of serving that snack—- make sure you have a protein-rich food [like Sabra hummus], and a fruit or vegetable [in my case, we usually always serve with cucumber or red bell pepper slices]. Or if you don’t have picky eaters to please, just throw it all together and call it a Mexican layered hummus dip like I do. I promise you’ll stay satisfied and won’t overeat at your next meal!

Ingredients
  • 2 cups Sabra Classic Hummus
  • ½ red bell pepper, diced
  • ½ cup cherry tomatoes, quartered
  • ¼ cup cilantro, chopped
  • 3 scallions, chopped
  • ½ cup feta cheese, crumbled
  • 1 jalapeno, minced [optional]
Instructions
  1. Spread hummus in a small serving dish. Top with ingredients.
  2. Serve with pita or tortilla chips.

    Have you considered writing a post eventually about freezer meals? I’m due a couple weeks after you and already dreading trying to cook with two littles in the dead of summer. Would love any tips!

      I think that’s a great idea! My only issue is we have such a small freezer lol! But maybe I can put one together with a round-up of different recipes. Would that be helpful?!
