Not sure what to do with leftover cranberry sauce? Make this simple cranberry sauce parfait with vanilla Greek yogurt!
Merry [almost] Christmas friends!!! I can’t believe THE holiday is here. And that this time last year I was patiently waiting for baby Anthony’s arrival. One food that reminds me of my pregnancy with Anthony AND Christmas is cranberry sauce! I know, strange [and tangy?!].
I’ve never been a fan of cranberry sauce but for some reason, I CRAVED my Mom’s recipe when I was pregnant with Anthony. I would always ask for the leftovers after a holiday dinner and would then eat it in odd ways. Or tasty ways, like in this cranberry sauce parfait.
Cranberry sauce is one of those foods that many think only goes well with turkey. But let me just tell you cranberry sauce is delicious with yogurt. And ice cream. And on bagels with plain cream cheese!
Can you tell I went a little overboard with this craving?! While I’m not planning on giving birth at Christmas this year, I DO plan on enjoying a big bowl of cranberry sauce… with yogurt! In these pretty cranberry sauce parfaits!
So if you are pregnant and looking for the next best craving, forget pickles and ice cream. Try this cranberry sauce parfait! You could also try the cranberry sauce as a topping in a yogurt parfait bar [I think it would go really well layered with chocolate chips too].
And even if you aren’t pregnant, it’s a delicious and nutritious way to enjoy leftover cranberry sauce from your holiday dinner. Merry Christmas! And God bless you and your family!
- 1 small orange, peeled
- 1 cup cranberries
- ⅓ cup sugar
- ½ cup celery, chopped
- ½ cup walnuts, shelled
- 1 ½ cups vanilla Greek yogurt
- Place all of the ingredients except the yogurt into a food processor. Pulse until the cranberry mixture is somewhat smooth.
- To assemble the parfaits, alternate layers of yogurt and cranberry sauce in parfait glasses, about a quarter cup of each for each layer. Serve immediately or refrigerate until ready to serve.
- Garnish with orange zest and walnut pieces if desired.

You’re right, I always think of cranberry sauce in the context of Thanksgiving but I totally shouldn’t! It looks delicious paired with yogurt in this lovely parfait and I like your idea of adding chocolate chips (chocolate is what I craved when I was pregnant)! 🙂
