Place all of the ingredients except the yogurt into a food processor. Pulse until the cranberry mixture is somewhat smooth.
To assemble the parfaits, alternate layers of yogurt and cranberry sauce in parfait glasses, about a quarter cup of each for each layer. Serve immediately or refrigerate until ready to serve.
Garnish with orange zest and walnut pieces if desired.
