  • 1 small orange, peeled
  • 1 cup cranberries
  • ⅓ cup sugar
  • ½ cup celery, chopped
  • ½ cup walnuts, shelled
  • 1 ½ cups vanilla Greek yogurt
  1. Place all of the ingredients except the yogurt into a food processor. Pulse until the cranberry mixture is somewhat smooth.
  2. To assemble the parfaits, alternate layers of yogurt and cranberry sauce in parfait glasses, about a quarter cup of each for each layer. Serve immediately or refrigerate until ready to serve.
  3. Garnish with orange zest and walnut pieces if desired.
