Yes, this chicken is not cooked yet. Scroll below to see the cooked version in the recipe cut-out. I haven’t quite mastered the cooked version of some recipes before the adults grab their portion….

It’s been a little over a week since my last post, and it’s only fitting I tell you what’s up: LIFE has caught up with me [about time?!] and I just needed a break. A break from the internet, the reality of my day-to-day, life circumstances, you name it. I remind myself that each and every day I’m sober, I have the opportunity to live my best life, be the best Mom, daughter, and friend. The best Katie- something I have shut down for years with my addiction. I needed the mental break and reset, so here I am once again. Back in… action?! If you’re in need of a reset too… or just want to start ANYTHING over, this quote below has helped me: 

Coming off of my reset, it was only fitting I kicked off Mother’s Day in high-gear with my crew. We had a great day playing basketball, drinking lots of coffee [me], walking/running outside, pretty much anything that involves fresh air. Which is just what this Momma loves!

One thing I love about living with my parents right now is that every day is pretty much Mother’s Day- because I’m hanging out with my Mom! She might have a few choice words for that sentiment [especially when the kids are here 24/7], but really, I am lucky to enough to be able to have this time to focus on myself and my family, all while under her and my Dad’s wing. SO, in a big thank you to my Mom and all the mom’s out there making dinner day in and day out, here’s an ode to one of her favorite recipes: chicken rollatini.

It’s one of my favorite childhood recipes that Mom found in a magazine

and something I always forget we have in our recipe repertoire. You can stuff the chicken with almost anything! But we love the salty, cheesy combo of salami and provolone. Pick and choose your stuffings, but don’t forget the store-bought marinara. You know I’m a fan of making dinner in a pinch with my recipes using jarred marinara sauce.
