Before I get into the nuts and bolts of this recipe, let’s just agree that these BLT pita pockets are quite possibly the cutest recipe I’ve ever assembled. Really. Even Joey was saying, “Mom these are cute!!!” He’s big into repeating things Mom says and cute is part of our vocabulary now. Enough gushing… onto the real reason I’m writing about BLT pita pockets!

I may not be on the back-to-school lunch packing train just yet, but I’ll let you in on a little secret: I pack my 34-year-old husband’s lunch. YEP. Consider it to be fairly similar to the lunch you might pack for your second grader. The truth is I love cooking for Ted, and can handle his criticism vs. my food throwing toddlers if a meal doesn’t go their way. So when he was rushing out the door, forgetting a lunch, and buying lunch almost every day at work, the dietitian wife in me stepped in and said, “hey, I got this!” I started taking on the task of packing his lunch. And about every other week that meant I was changing up his typical turkey sammy routine with something new- just like I do with the toddlers! Let’s just say he was VERY surprised when he opened his lunch and saw these cute little BLT pita pockets!

Nope. Ted doesn’t call them cute. But he loves bacon, and so do the boys, so everyone is happy when a few slices show up in their lunch! When my friends at Sabra asked me to try out their new line of fresh tasting, refrigerated spreads made with hummus, my lunch packing skills and Ted’s lunches immediately came to mind. He’s not a fan of mayo or anything I try to disguise as a healthy Greek yogurt spread. But he LOVES hummus, and consequently the variety of flavors these spreads offer [Garlic Herb, Sea Salt & Cracked Pepper to name a few]. So instead of a dry BLT pita pocket, I added the Sea Salt & Cracked Pepper Sabra Spread, which was essentially a fresh new way for Ted to love hummus. Here’s how I made these cuties:

Serves: 4 servings
Ingredients
  • 8 mini pita pockets [2 per person]
  • 8 pieces of bacon, cooked and cut in half
  • 1 large tomato, sliced thin
  • ½ cup fresh spinach leaves
  • Sea Salt & Cracked Pepper Sabra Spread [about 1 tablespoon per pita]
Instructions
  1. Open pita pockets. Spoon Sabra Spread into the pocket. Fill with bacon, lettuce, and tomatoes- diving all ingredients evenly between pita breads.
  2. Serve immediately.

I’ll be honest, I have a little more kick in my lunch-packing-step now that I have a few new spreads to try on Ted’s sandwiches. In fact, he’s requested the honey mustard spread on our basic grilled chicken recipe too. Who is this guy?! All I know is, a little goes a long way when it comes to condiments and sandwiches, wraps, or pitas. But if you want to kick up the flavor and drop some fat in your lunch packing game [or this cutie-pa-tootie BLT pita pocket], add a Sabra spread. They are the first of its kind to hit grocery stores, and can be found in the deli section where you’d find other great Sabra products.
