It’s back to school season, which means apple season here in Michigan is about to start too! Do you see why my mind always travels to food?! Mainly because I associate the seasons or life events with some of my favorite eats, like these apple, cheddar, and bacon quesadillas. Can you blame me for wanting to send my kids off to preschool with a lunchbox or two filled with this Michigan apple deliciousness?!

Apple, Cheddar, and Bacon Quesadillas double as lunch or dinner recipe. The perfect flavor combination of sweet, salty, and creamy, in just 4 ingredients! 

I take that back. While I’m not packing preschool lunches this year [next year guys!], I know I can whip up this simple lunch or dinner option in no time, which is especially important during the busy back to school and back to after-school activity season. These apple, cheddar, and bacon quesadillas can be made in NO TIME if you cook the bacon ahead of time, which is dangerous around this house because my kids come running at the smell of bacon! I also think they make a perfect packable lunch. Just make the night before or the morning of [you can heat in the microwave if the bacon is fully cooked], fold, add to a resealable bag and put in your lunchbox. I’m sure you lunch-packing mommas have a better trick for adding cooked quesadillas or sandwiches to lunch bags, so by all means, leave your tips below!

    I use the Costco fully cooked microwaveable bacon because I hate cooking it 😬 Is that cheating? I’ll definitely be trying these for a quick dinner before evening activities, thanks!

    My husband and I are both retired. I tried these yesterday morning for breakfast since the photo looked so good. We both really liked them. Looking forward to having them again.
