It’s back to school season, which means apple season here in Michigan is about to start too! Do you see why my mind always travels to food?! Mainly because I associate the seasons or life events with some of my favorite eats, like these apple, cheddar, and bacon quesadillas. Can you blame me for wanting to send my kids off to preschool with a lunchbox or two filled with this Michigan apple deliciousness?!

I take that back. While I’m not packing preschool lunches this year [next year guys!], I know I can whip up this simple lunch or dinner option in no time, which is especially important during the busy back to school and back to after-school activity season. I also think they make a perfect packable lunch. Just make the night before or the morning of [you can heat in the microwave if the bacon is fully cooked], fold, add to a resealable bag and put in your lunchbox. I’m sure you lunch-packing mommas have a better trick for adding cooked quesadillas or sandwiches to lunch bags, so by all means, leave your tips below!
