You guys know I’m obsessed with slow cooker shredded chicken. But sometimes I forget to put chicken breasts or chicken thighs in my slow cooker at the start of the day. That’s when I’ve been known to call Ted and ask him to bring home a rotisserie chicken from the grocery store. We’ve purchased ours from multiple stores in the Metro Detroit area and I can tell you that I haven’t had to pay more than $9.00 for one. I’m pretty much paying that amount for a package of chicken breasts when they aren’t on sale! Granted the price point depends on what your store offers and if that fits within your grocery shopping budget. But I think it’s worth the cost every now and then. We’d definitely be paying more for carry-out or pizza delivery.

1. Shred and enjoy as-is!
Yep, fancy I know. But rotisserie chicken is usually seasoned well and very flavorful and moist in my experience. I love rounding out my plate with a green veggie or two, and a whole grain.
2. Rotisserie Chicken Caesar Salad
I grew up eating Caesar salad once a week, and while my boys aren’t on the green salad eating kick just yet, I love making this easy weeknight meal for Ted and myself. And of course, give the boys their usual chicken + BBQ sauce with a few leafy greens on the side.
I know soup isn’t usually a quick fix kind of meal, but you can make this soup even faster by adding rice or grains that have been cooked ahead of time. Or I will you a microwaveable pack of rice and in 90-seconds it can be thrown into a soup.
My original recipe had me cooking the chicken in BBQ sauce then shredding. But I realized I can make this recipe in MINUTES by using rotisserie chicken and mixing it with some BBQ sauce. Did that make sense?! Read the recipe. I think it will after that..
One of my favorite weeknight meals to eat as-is, or reheated the next day! Just don’t forget to top with some crunch nacho cheese Doritos!

Thank you for sharing this recipie, I made this tonight, and it was amazing!! I am am going to freeze the leftover miso mixture in an ice cube tray for easy measurement in the future. For soft boiled eggs place eggs in 1″ boiling water, cover and cook for 6 minutes exactly, and they come out perfectly. Thanks again!

Thank you for sharing these awesome crock pot recipes. My family and I tend to eat the same thing every week due to the fact that both parents work full-time jobs and by the time baby is picked up from preschool we are all exhausted. These crock pot recipes give me a better idea of ways to incorporate new meals. The food will be done by the time we get home and not spending an hour trying to cook after we finally make it home from work.
