While I’m all for themed meal planning and prepping ingredients for meals ahead of time [mainly produce prep], I like to wing-it when it comes to executing a recipe. Or as my Mom and I like to call it, I’m a no-recipe kind of cook. I’ve shared a few posts in the past about a few of my favorite no-recipe meals [aka meals you don’t need to follow an exact recipe for] and today I’m rounding up 5 of my favorite fall no-recipe meals to date.

No-Recipe Meal Ideas for Busy Moms

I think there’s a reason I’m NOT a baker. Baking is exact. You can’t skimp on flour or eggs. But I love whipping up a good skillet or slow cooker meal where I can eyeball my recipe and make it my own. Alas, I’m a no-recipe kind of cook! So here are a few no-recipe meals that have hit my menu rotation as of late! Don’t forget to swap ingredients or amounts when applicable. That’s what makes them no-recipe gems!

Ground Chicken Italian Skillet

Oh so the thing about no-recipe meals is that I kind of make up the recipe name based on the ingredients I throw in the pan. Basically I cooked some ground chicken with mushrooms, onions, spinach, and cherry tomatoes. I added some garlic and Italian seasoning. And then paired the main with roasted cauliflower and brown rice. Manja!

Chicken Ravioli with Hummus Pasta Sauce

Ok. So take your favorite pasta. Protein. And veggies [sautéed]. Then make a simple hummus pasta sauce with ¾ cup hummus + 1 cup pasta water [after you’ve boiled and drained your pasta]. Not rocket science. But a very creamy, protein-packed pasta dish!

Rotisserie Chicken Taco Skillet

I’ve been known to pick up a rotisserie chicken [cooked] at the grocery store once every other week and this past time I mixed the shredded chicken with taco seasoning + a package of pre-cut veggies! This was the perfect mix for tacos, taco salads, or quesadillas!

Chicken Noodle Soup

Sharing yet again another favorite way to use rotisserie chicken… in chicken noodle SOUP! This soup has TONS of flavor because I sautéed the carrot, onion, and celery in butter + salt, pepper, and garlic powder. Add shredded chicken, broth, cooked noodles, and some grated parmesan cheese, and voila! Soup’s on!

Slow Cooker Beef Stew

I cheated here. But for good reason. Sometimes I rely on store-bought shortcuts like packaged seasoning mixes. And for this recipe I added everything you’ll find in a beef stew: stew meat, carrots, potatoes, onions, celery, McCormick Slow Cooker Hearty Beef Stew package, and a can of tomato sauce. Honestly, I mixed it all together, put it on low for 10 hours, and one of the best fall dinners was served! Not a fan of packaged seasoning mixes? No problem! Just Google slow cooker beef stew and you’ll get a recipe or two.
