It’s November. Yep, you heard that right. NOVEMBER! I seriously have no idea where this year went, but I can tell you yesterday was the longest day of my life. Long days and short years. That’s basically how I feel about life with small children! With the holidays upon us, if you’re like me then you are not only thinking about finishing [or starting] your holiday shopping, but you’re conscious about all the extra sugar and calories that seem to present themselves this time of year. OH, and you have to still get dinner on the table regardless of how many school plays, sport tournaments, or in my case, little elves you have to shop for. That’s where this ginger pork stir-fry comes in. A 20-minute meal, lower in calories and sugar than the traditional Chinese takeout, and the kind of meal I need in my back pocket or recipe book during the busiest time of the year!

Not only are we kicking it into high-gear for the holidays, November is actually recognized as National Diabetes Month. Diabetes is condition in which diet and nutrition plays a huge role, and as a registered dietitian, I’ve been conscious to consider the nutrients in my recipes for individuals of all ages, shapes, sizes, and yes, medical conditions. So when I was asked to create a recipe in honor of National Diabetes month using Truvia® Nectar, I knew a quick weeknight meal like this ginger pork stir-fry would do the trick.

Ginger Pork Stir-Fry is a one pot meal with a simple stir-fry sauce made with Truvia® Nectar. It truly satisfies and meets the criteria for an easy weeknight meal.
Research shows [as evidenced by the recommendations in the 2015-2020 Dietary Guidelines for Americans] that the use of calorie-free sugar substitutes like Truvia® Nectar may help individuals maintain a healthy weight, and can also help to reduce the risks associated with excess intake of caloric sweeteners.
While many stir-fry recipes call for some form of sweetener in the stir-fry sauce [i.e. honey], I made my sauce with Truvia® Nectar. Truvia® Nectar is a great-tasting stevia-based sweetener and can be a great option for people looking to add a little sweetness to recipes while managing sugar intake and reducing calories. Let’s just say, a little of this sweetener goes a long way! What I love about Truvia® Nectar is that it’s SO versatile— it can be used in recipes that call for sugar, agave, or honey, making it safe and appropriate for use by people with diabetes. If you or someone you know has diabetes, then you know there’s a lot to managing the disease. I’ve found by making simple dietary swaps, as shown here with this ginger pork stir-fry and Truvia® Nectar, it makes life just a little easier and tastier. And I think we could all use a little easy this time of year.

Serves: 4 servings
Ingredients
  • ¼ cup soy sauce
  • 2 tablespoons Truvia® Nectar
  • 2 teaspoons fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon canola oil
  • 1 pound pork tenderloin, cut into 1-inch pieces
  • ½ medium yellow onion, diced
  • 1 red bell pepper, diced
  • 2 cups green beans, trimmed and cut in half
  • Cooked brown rice for serving
Instructions
  1. In a small bowl, combine the soy sauce, Truvia, ginger, and garlic. Set aside.
  2. Add oil to large skillet or wok over high heat. When hot, add the pork. Cook, stirring frequently, until browned on all sides about 5 minutes. Add green beans, onion and peppers. Cook for an additional 3, until the vegetables and pork are cooked through.
  3. Stir the sauce into the pan and cook for an additional 3 minutes, stirring frequently. Remove from heat.
  4. Serve over brown rice.

Oh and just because I always have to mention how my family enjoyed this recipe, I’ll add that all the veggies [minus the onions] were gobbled up by the boys. A few pork pieces hit Anthony’s mouth [standard] and Joey wanted more “SAWWWS” for his rice.
