I know what you are thinking. Oh lord, here she goes again with another shredded chicken meal idea. Nope— I tricked yah! Instead I took the easy way and let my local Kroger help me with a simple weeknight meal. Don’t you just love that you can walk into the grocery store and pick up a rotisserie chicken and voila, the main part of your dinner or lunch is cooked and ready to go! Lately my favorite way to use up a store bought rotisserie chicken is in a salad. I’m the salad eater of the house, so while I give the boys a few pieces of the white meat chicken, I can have the rest for a big ole’ bowl of leafy green deliciousness to myself. I tried that line about deliciousness on Joey and Anthony to tempt them into trying this chicken Caesar salad and they were having none of it….

If there’s one thing I learned about making my own chicken Caesar salad dressing it’s that the dressing tastes SO good because, well, there’s lots of tasty, somewhat fattening things in it. So beware- go easy on the dressing and the cheese. Or else you’ll defeat the whole purpose of having a nice light salad for dinner. And if you’re wondering how I deconstruct this salad for the kids, I don’t. They get the chicken and a little dressing to dip in. And Mom enjoys the rest… because I’m worth it! No really, we don’t do salad that often so when I make a favorite I rarely share. Chances are if you try this chicken Caesar salad you won’t be sharing either!

I grew up eating Caesar salad with my Mom’s homemade dressing once if not twice a week. So you can thank Sue for this recipe— if you LOVE lemon like we do, then this dressing is for you!

Rotisserie Chicken Caesar Salad

Serves: 4 servings
Ingredients
  • Dressing:
  • ¾ cup olive oil
  • 1 clove garlic
  • 1 egg
  • 1 tablespoon cup red wine vinegar
  • ½ large lemon, juiced and zested
  • Salad:
  • ½ cup shredded parmesan cheese
  • 4 hearts of romaine lettuce, washed, dried, and torn into pieces
  • 1 rotisserie chicken, cooked, diced or shredded into bite-sized pieces
  • 10-12 croutons or garlic toasts [I purchased mine at Kroger]
  • optional: 4-6 slices of bacon, cooked, crumbled
Instructions
  1. To make the dressing, add olive oil, garlic, egg, lemon juice, lemon zest, and vinegar to your food processor. Process until dressing thickens, about 30-45 seconds.
  2. To assemble the salad, combine dressing, parmesan cheese, lettuce and chicken in large mixing bowl. Toss well.
  3. Serve immediately with croutons and extra cheese if desired.
