Rotisserie Chicken Caesar Salad

  • 1 cup olive oil
  • 1 clove garlic
  • 1 ½ tablespoons whole grain Dijon mustard
  • ¼ cup red wine vinegar
  • 1 large lemon, juiced and zested
  • ½ cup shredded parmesan cheese
  • 4 hearts of romaine lettuce, washed, dried, and torn into pieces
  • 1 rotisserie chicken, cooked, diced or shredded into bite-sized pieces
  • 10-12 croutons or garlic toasts [I purchased mine at Kroger]
  • optional: 4-6 slices of bacon, cooked, crumbled
  1. To make the dressing, add olive oil, garlic, mustard, lemon juice, lemon zest, and vinegar to your food processor. Process until dressing thickens, about 30-45 seconds.
  2. To assemble the salad, combine dressing, parmesan cheese, lettuce and chicken in large mixing bowl. Toss well.
  3. Serve immediately with croutons and extra cheese if desired.
