4 hearts of romaine lettuce, washed, dried, and torn into pieces
1 rotisserie chicken, cooked, diced or shredded into bite-sized pieces
10-12 croutons or garlic toasts [I purchased mine at Kroger]
optional: 4-6 slices of bacon, cooked, crumbled
Instructions
To make the dressing, add olive oil, garlic, mustard, lemon juice, lemon zest, and vinegar to your food processor. Process until dressing thickens, about 30-45 seconds.
To assemble the salad, combine dressing, parmesan cheese, lettuce and chicken in large mixing bowl. Toss well.
Serve immediately with croutons and extra cheese if desired.
