When it comes to making a meal for my family, the recipe has to be a. something I know the boys will at least TRY and b. quick and healthy. I guess that’s three things, but whose counting… Notice I said, “try” vs. finish. We are in the thick of picky eating with Joey and I’m trying to make mealtime as pleasant as possible for everyone. And because I like cooking more than macaroni and cheese and pizza, I find myself making things I know he’ll try one of two bites of [and yes, he still gets some of his favorites on the plate too]. That brings me to these Hawaiian BBQ chicken quesadillas. It has components that Joey loves to eat [fresh pineapple, tortillas, and BBQ sauce] with one or two foods Mom is trying to get into his diet more often [protein like chicken].

What I love about this recipe is that the Hawaiian BBQ chicken quesadillas filling can be made DAYS ahead of time [or the day of] by using the slow cooker. And when it’s time to eat the quesadillas are assembled and baked in the oven just before serving. You heard me right. These are oven-baked quesadillas! Which makes it easy to bake a few at a time and the cleanup is a breeze.

Now lucky for me, Joey loves quesadillas. And when Azteca Foods approached me to showcase a fast and healthy recipe using No Artificial Preservative flour tortillas I couldn’t say no!

My quesadilla loving picky eating toddler was the main driver for this recipe. Then there’s these tortillas: made without artificial colors or flavors, high fructose corn syrup, oh and the kicker? They are part of Azteca’s better-for-you options, which includes tortillas with added Calcium and Vitamin D. I personally liked how light and airy they feel— so I didn’t get so stuffed after eating my Hawaiian BBQ chicken quesadilla. They also crisped-up perfectly in the oven!

Hawaiian BBQ Chicken Quesadillas

Serves: 4 servings
Ingredients
  • 1.5 pounds boneless skinless chicken breasts
  • 2 cloves garlic, peeled
  • 1 large onion, sliced
  • 1 cups fresh pineapple, cubed
  • 2 cups BBQ sauce
  • 8 Azteca No Artificial Preservative flour tortillas
  • 2 cups cheddar cheese, shredded
  • Optional: BBQ sauce and sour cream for serving
Instructions
  1. Take chicken out of slow cooker and shred with two forks. Return shredded chicken back to slow cooker.
  2. Coat one side of two tortillas with cooking spray. Place coated side down on an ungreased baking sheet.
  3. Top each tortilla with the slow cooker mixture. Cover with remaining tortillas. Spray tops with cooking spray.
  4. Bake at 425 for 10 minutes or until golden brown. Cut into wedges and serve with additional BBQ sauce or sour cream.
