7 Easy Ways to Enjoy Zucchini This Spring and Summer

April 9, 2025 By Katie

If your garden is overflowing or your local farmers market is bursting with fresh zucchini, you’re not alone! Zucchini squash is one of the most abundant and affordable vegetables of the spring and summer seasons—and lucky for us busy moms, it’s also one of the most versatile.

Whether you’re trying to add more veggies to your family’s meals or looking for new ways to use up that zucchini stash, here are 7 easy ways to enjoy zucchini all season long!

Whether you’re trying to add more veggies to your family’s meals or looking for new ways to use up that zucchini stash, here are 7 easy ways to enjoy zucchini all season long!

7 Easy Ways to Enjoy Zucchini

1. Baked Zucchini

Looking for a kid-friendly way to serve zucchini? Try baking it into crispy fries or cheesy rounds. Just slice, season, coat in breadcrumbs or Parmesan cheese, and bake until golden. It’s the perfect side dish or snack—and great for picky eaters! Try this Baked Zucchini Sticks.

2. Skillet Zucchini

A quick weeknight dinner hero!  Toss sliced zucchini into a hot skillet with olive oil, garlic, and onions for a fast, flavorful side. You can also mix it into pasta, stir-fries, or scrambled eggs. One pan, minimal mess. Win-win! Try this Sausage and Zucchini Skillet.

3. Zoodles (Zucchini Noodles)

Zoodles are a fun and healthy alternative to pasta—especially in the warmer months when light meals feel just right.  Use a spiralizer or veggie peeler to turn zucchini into noodles, then sauté and top with your favorite sauce.

4. Grilled Zucchini

Nothing says summer like firing up the grill! Slice zucchini lengthwise, brush with olive oil, and grill until tender with those beautiful char marks. It’s the perfect side for burgers, chicken, or any outdoor BBQ.

5. Zucchini Soup

Zucchini adds creaminess and nutrition to soups without overpowering flavor. Blend it into a creamy green soup with onions, garlic, and broth for a cozy lunch—even in summer!

6. Sautéed Zucchini

Simple and classic, sautéed zucchini is always a go-to. Slice and cook it in a little butter or oil, season with salt, pepper, and herbs, and serve it as a side to just about anything. It’s quick, easy, and family-approved! Try this Easy 10-Minute Parmesan Zucchini.

7. Stuffed Zucchini

Turn your zucchini into the main dish by stuffing it! Cut in half, scoop out the middle, and fill with lean ground meat, beans, rice, or veggies. Bake until bubbly and golden. It’s hearty, healthy, and makes for beautiful presentation too.

Zucchini is mild, nutrient-rich, and endlessly adaptable—which is why it deserves a spot on your table all season long. From zoodles to skillets, soups to grills, these 7 easy ways to eat zucchini will help you make the most of this seasonal veggie.
