When All Else Fails, Serve This!

There are approximately 2 categories that Serbinski dinners as of late could be classified as: Brinner [i.e. breakfast for dinner] OR pizza, which you know needs no explanation. There was a time and place when dinosaur chicken nuggets stole the dinner stage, but now, I’m relying SO much on easy brinner ideas as well as our family staple, pizza.

Are other meals getting mixed in? You betcha! Probably 2-3 nights a week we’ll have a Ground Beef recipe, or grilled chicken as a main along with a salad, roll, or prepped produce favorite. But for the most part between neighborhood ball games, soccer games, baseball practice, and soon-to-be after-school trips to the pool, I’m bringing out frozen waffles or pancakes or pizza.

There’s something to be said about this stage in life when I’m PRESENT for my children in a physical and emotional way. Many of you know there have been times when I couldn’t show-up in ANY way. My struggle with addiction and anxiety and depression has impacted many of those I love over the years and today, well, WE are in a good place.

And because of that I’m worrying less about a gourmet recipe and more about helping Michael hit the ball off a tee.

Frozen breakfast favs? Eggo waffles and pancakes, DUH! Leggo of my Eggo! Remember that one?? You could also go homemade with these Easy Pancake Muffins

And as for pizza… well, pizza as been chronicled on this blog for a long, long time [check out my guide to homemade pizza]. You can totally go homemade, or you can use a biscuit as the base, a bagel as the base, or even a pita pocket!

Whatever season of life you’re in, I hope you’re finding joy in some part of your day. For me, that hasn’t been making homemade meals. It’s been relying on the freezer section of the grocery store and taking more time to play catch or draw with the kids. Even though I might end up with a broken window or two this summer, I’ll take that as progress! And besides, which kid can say no to another night of pancakes and bacon?!

These 3 will eat me out of sausage AND bacon… and milk… AND… the list goes on.
