Fish and seafood are one of those things you’ll rarely find in our house. In fact, when Ted and I go out to eat I’ll usually skip the meat and head straight to the seafood section on the menu. I like when someone else cooks it for me! But because I’m trying to get my boys to eat more of it [mainly for religious reasons- we are practicing Catholics and are in the middle of Lent!], I’m making it my mission this year to start serving up more fish and seafood at home. Let’s just say these honey garlic shrimp were a GREAT way to start.

I marinated the shrimp in a simple honey garlic sauce for an hour, then cooked them in a large skillet while I put together the rest of our dinner. I’m a big fan of these microwaveable brown rice packs, and a simple avocado and tomato salsa [see recipe notes for how I make it]. Throw it all together and Ted and I enjoyed honey garlic shrimp bowls!

The boys? You guessed it. I made the meal work for them [taking some tips from other moms on how to feed picky eaters] and served it “their way.”

Whether or not you are eating fish on Friday’s during Lent or just looking to add more seafood and fish recipes to your repertoire, you’ve gotta give this one a try. OH and get your toddler or child in the kitchen and have them help you make the marinade for the shrimp! Because shrimp aren’t something the boys have seen much, this was a key step in the whole process of making the meal… since I wanted them to be excited about taking a bite or two. Enjoy!

Honey Garlic Shrimp [for Tacos, Bowls, and More!]

Ingredients
  • 1 pound medium uncooked shrimp, peeled and deveined
  • ¼ cup honey
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • Consider serving with: brown rice, tortilla shells, salsa [my recipe in notes], and your other favorite taco or bowl toppings.
Instructions
  1. Add honey, soy sauce, garlic, and ginger to large resealable plastic bag or container. Stir to combine sauce ingredients. Add shrimp, cover, and refrigerate. Marinade for at least 1 hour or up to 8 hours.
  2. Heat large non-stick skillet over medium-high heat. Please shrimp + marinade in skillet. Cook on one side about 2 minutes, then flip shrimp over. Cook until shrimp is cooked through and sauce thickens, about 3-4 minutes.
  3. Serve immediately with your favorite taco garnishes and toppings.
Notes
Fresh salsa: 1 cup cherry tomatoes [quartered], 1 cup seedless cucumber [diced], 1 clove garlic [minced], ½ lime [juiced], ¼ cup cilantro [chopped], salt and pepper to taste.
