If you’ve been following my Instagram stories this week, then you know I’ve started a new little series called Nutrition Nuggets. Just think: chicken nuggets meet Mom’s nutrition facts, which in turn brings us to #nutritionnuggets. Yeah, that’s how my brain works. Anyhow, this week’s #nutritionnuggets focused on fiber, and small changes in my own diet habits that not only boosted my daily fiber intake, but tasted really good too!
That’s the how and why this simple white bean and spinach soup was created. I’m sure you’re looking for a recipe here, but when it comes to soups like this one, I sort of just went for it and eyeballed much of the ingredients.
#NutritionNuggets: ½ cup of beans [no matter the kind!] is about 5g [grams] of fiber. Ladies, we need about 25g each day. And men, you need about 35g.
Instead of focusing on an actual number or meeting that 25g this week, I just made a more conscious effort to add fiber to my diet. And to actually eat meals and/or snacks. Not just candy at 2am.
What’s in the simple white bean and spinach soup? Here are the cast of characters: onion, carrot, celery, sun dried tomatoes [a couple tablespoons chopped], garlic, cannellini beans, diced tomatoes, fresh spinach, fresh parsley, and fresh basil. Oh and a sprinkle of parmesan cheese at the end. VOILA!
Another no real recipe, recipe for ya! And a cozy one to bring on a chilly, yet sunny weekend. The week didn’t start so great [yeah, even on my birthday]. But thanks for being a space where I can share the lows- and now the, “back to normal.”
