Slow Cooker Ground Beef Hoagies are the perfect melt-in-your-mouth sandwich made with lean beef, lots of veggies, and the ease of your slow cooker.
Well, I’m still here. All 3 of my children and my husband and myself are still alive. But guys, we’ve been MORE than down for the count since I shared the most moist chicken breasts ever. HOLY COLD BATMAN. We’ve been hit with a crazy string of cold, cough, flu, and fever, that I’m almost afraid to write another blog post. Between trips to the bathroom, Marvel movie viewings, and occasional playdates where I prayed we didn’t get any of our friends sick [sorry in advance!], I somehow managed to throw together this recipe for slow cooker ground beef hoagies. And by throw together, I mean I developed one delicious recipe that will be in our dinner time rotation for weeks to come!
Isn’t that how life goes though? You make a delicious dinner [i.e. ground beef hoagies] and 3 out of 5 in your family have zero appetite. But hey, things are looking up, as Joey asked for just a cheesy hoagie, Anthony and Lily ate a few bites of beef, and Dad had three, yes THREE, hoagies!
Now when you read my recipe instructions you might wonder why I cooked the ground beef in the skillet before adding to my slow cooker. Honestly, I’ve had zero luck adding raw ground meat to my slow cooker and breaking it into crumbles when cooked. And considering many of the recipes I found online using ground meat in slow cooker recipes followed the same process I did, I went with what I know! One more recipe note: If you can’t find canned French onion soup worry not, just substitute one cup of beef broth + 2 tablespoons of Worcestershire sauce. While it’s not the same thing, it will give your sandwiches enough broth and zip to dip!
- 1 lb. lean Ground Beef
- 2 cloves garlic, minced
- 1 medium onion, diced
- 1 green bell pepper, diced
- 1 cup fresh mushrooms, washed
- 1 cup canned French onion soup
- 1 cup mozzarella cheese, shredded
- 6-8 hoagie rolls
- Heat large non-stick skillet over medium-high heat. Add ground beef and cook for 8-10 minutes, breaking into crumbles.
- Add beef, garlic, onion, bell pepper, mushroom, and soup to slow cooker. Cover and cook on low for 6 hours.
- To serve, top hoagie rolls with beef mixture, shredded cheese, and broil for 2-3 minutes, or until cheese is melted.
Guys, that’s all I’ve got. But based on my family’s recent circumstance I consider it pretty good, don’t you think?!
