From a flatbread to a bowl with brown rice, this shrimp Florentine skillet makes the perfect, flavorful meatless meal.

I honestly had no idea what to call this recipe, but shrimp Florentine skillet sounded like my best option when staring at this picture of shrimp, spinach, and other colorful fresh veggies. Florentine in cooking typically involves spinach, which is the second star of the show in this shrimp Florentine skillet. The first star? The shrimp of course! Florentine doesn’t usually involve toddler taste buds in this house, but it sounded and tasted delicious to Mom, so who else is keeping score?!

I always find myself cooking more shrimp during the Lenten season a. because it’s fast, and b. it kind of resembles the same texture to poultry, which is usually something my toddlers will take a bite or two of. Put it all together with a veggie-packed, butter-laden sauce, and you know I wasn’t sharing much of my portion.

Ok, so I lied. The kids weren’t too keen on the shrimp Florentine skillet, mainly because of ALL. THE. VEG. Mom put into the skillet. But they were just as happy with pizza and hummus flatbreads while Mom and Dad had their Florentine shrimp on top of flatbreads.

So whether your family likes shrimp, spinach, or all of the above, give this shrimp Florentine skillet a try with all the fresh veggies coming into season this spring. And if all else fails, make a cheese flatbread for your kiddos like the Serbinski’s do! This Mom is in full support of that option!

Shrimp Florentine Skillet

Serves: 3-4 servings
Ingredients
  • 2 tablespoons unsalted butter
  • 1 cup cherry tomatoes
  • ½ white onion, diced
  • 1 cup asparagus, diced
  • 2 cups fresh spinach
  • 3 cups fresh shrimp, peeled, deveined
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon lemon pepper
  • Serving options: Flatbread [with melted mozzarella cheese], brown rice, or fresh lemon juice
Instructions
  1. Heat butter over medium-high heat in non-stick skillet. Add vegetables, and sauté until heated through about 5-7 minutes.
  2. Add shrimp and seasonings. Combine among vegetables until shrimp is cooked, about 3-4 minutes.
  3. Serve immediately.
