My mind is a little all over the place with blogging content right now as August kicks off back to school season. The truth is, none of us know what back to school looks like right now. And we are about 3 weeks away from school starting! To ease my anxious thoughts and to focus on what I can control TODAY, I figured I’d add a new no recipe recipe that works as an easy back to school dinner option. Or heck, a dinner or leftovers lunch for any night of the week. Virtual or in-person learning or NOT!

Ms. Lily is ready to wear her mask to school! Michael? Not so much. Glad we have a few more years with our buddy-bud at home!

The thought for these sausage pepper and onion flatbreads came to me like most of my dinner recipe ideas. Each component of this recipe excites at least one of my children, and the entire recipe excites Mom. Win-win! You guys know I’m a sucker for Sabra hummus, so to give these flatbreads a little extra flavor, I used Sabra’s roasted red pepper hummus as the base. The beauty is you can use any hummus or flavor combination you like. Just don’t forget the sprinkle of feta at the end. That’s non-negotiable.

Sausage Pepper and Onion Flatbreads are as simple as they sound. Let your slow cooker do the work for the sausage, and the mixture of hummus and feta cheese serve as the base for these flatbreads.

It’s as simple as this: take my method for slow cooker sausage, peppers, and onions, slice and dice, then layer some hummus on the flatbread, top with the sausage and pepper mixture, then sprinkle with feta. Bake until warmed through. Voila! Hope that made sense to you. Because these sausage pepper and onion flatbreads tasted really, really good to me.

No-Recipe Recipe for Sausage Pepper and Onion Flatbread:

  1. Cook sausage, peppers, and onions in the slow cooker [this is great as-is, so really you can get 2 meals out of this recipe]
  2. Top a large flatbread with hummus
  3. Divide sausage, pepper, and onion mixture over flatbreads
  4. Sprinkle with feta cheese
  5. Bake at 350 until warmed through

Because let’s face it: regardless of what school looks like, this Mom still has to get dinner on the table! And I’m guessing you do too!
