I’ve started a new “trick” with the boys not only to expose them to new foods, but to actually get them to EAT these new foods! What’s the magic potion made of? It’s easy. You don’t serve the same thing at a meal two days in a row, BUT, you always make sure there’s something at that meal the kids will like. Sounds easy enough right? That’s how I came to make these salsa ranch chicken wraps. The boys love Flatout Flatbread, salsa, and ranch. Do you think they noticed the chicken?
Yes. Oh yes they did. But half the battle of getting kids to enjoy new foods and expand their palates is exposing them to those foods. And while shredded chicken is nothing new on my family’s menu, serving it with salsa and ranch in a wrap is a new idea. Now if this way of feeding kids seems like a lot of extra work, it really isn’t. We use a simple breakfast and lunch rotation of 2-3 options a week [yes, boxed cereal is one of them], and I usually have 3-4 homemade dinners I make each week. It’s all about the leftovers folks. And simple, healthy meals, like this salsa ranch chicken wrap. WHICH, I also use the wraps for breakfast burritos, quesadillas, and peanut butter roll-ups. I could’ve called this recipe a wrap, quesadilla, or burrito, using the Flatout Flatbread. And you know what? I think that would’ve counted as three different meals. Agree? Disagree? Or go with it? Chicken can be cooked faster in the oven at 350 for 30 minutes and shreds easily. But you KNOW I am a slow cooker fan and definitely made a big batch of this salsa ranch chicken on the weekend!
- 1.5 pounds boneless, skinless chicken breast
- 1 cup salsa, extra for serving
- 1 tablespoon dry ranch seasoning
- ¾ cup shredded cheddar cheese
- 4 Flatout Flatbreads [your choice]
- Toppings: Salsa, avocado, ranch dressing, lettuce
- Add chicken, salsa, and ranch seasoning to slow cooker. Cover and cook on low for 6 hours or high for 4 hours. Remove and shred with two forks.
- Top flatbread with shredded chicken, cheese, and additional toppings. Enjoy!
