Sometimes I forget that there’s more to lunch than grilled cheese or hummus and crackers. Or at least I think my boys would like me to forget! So, every now and then I like to change-up their weekly lunch routine with something out of the ordinary, using as many things I have one hand without making a special trip or order at the grocery store. That’s essentially how I created these roasted veggie English muffins. I almost always have a batch of roasted veggies on hand, pizza sauce ready to be used, and English muffins in the freezer. Make it a meal and it’s considered something fairly gourmet in a toddler’s world!

One part of my weekly food prep almost always involves roasting veggies. We’ll eat them as a main side for one dinner, and then I’ll use the leftovers for sides at lunch OR mixed in with cottage cheese or eggs for this Momma. When I spotted a few extras in the fridge I figured, “Hey! Why not on an English muffin pizza?!” the boys DID eat the veggies. And the English muffins. Just not together… whatever works folks, whatever works.

Just like my super simple shredded chicken, I almost feel a little silly calling this a recipe and posting it. BUT, if you’re anything like me, sometimes you just need that simple reminder of using what you have on hand. And letting your inner-toddler-Rachael Ray out to cook [and party]. Plus, I do want my kids going away to college knowing that Mom can make more than grilled cheese or grilled hot dogs for lunch.

Roasted Veggie English Muffins

Serves: 4 servings
Ingredients
  • 4 English muffins, split
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella
  • 2 cups roasted vegetables
Instructions
  1. Preheat oven to 375.
  2. Place English muffin halves cut side up onto a baking sheet. Spoon some of the pizza sauce on each one. Top with mozzarella cheese and roasted vegetables.
  3. Bake for 10 minutes or until cheese is melted and browned on the edges.
Notes
Vary your veggies and roast 1-2 different vegetables for pizza toppings. Or use leftover veggies from dinner the night before.

    My two year old and I make english muffin pizzas too. He devours anything if it’s on a pizza…kale, spinach, chard! We make pizzas on tortillas too. It’s such an easy, healthy meal to make while using up leftovers. And it gets us away from the PB sandwiches he requests on a daily basis!

      Hi Amy! I have yet to try greens on a pizza but you’ve given me the inspiration to do so! I think my hubby might even light that option too 😉 Thanks for sharing an easy, mom-approved idea!
