Easy homemade muffins are made with pantry staple ingredients and make a simple snack or breakfast on-the-go.

I swore off baking a few months ago, but then I made cinnamon applesauce muffins and had a change of heart. Then last week when I was reminiscing about the ups and downs of raising toddlers, I heard a knock at our door and and immediately thought, “how the heck did Joey get outside?! It’s NAPTIME!” But instead it was my neighbor bringing us a batch of these easy homemade muffins.

When I thanked her for the muffins and the kind gesture, she thanked me for taking my kids outside and adding such fun and flair to our street. Not quite sure where the flair comes from [I swear we are always dressed when we hit the pavement], but the fun, well she’s got that right! Now that Anthony’s running after big brother you can usually find the Serbinski brothers running from one driveway to the next and voluntarily picking weeds and flowers from our neighbor’s lawns…. Looks like our neighbor doesn’t mind the gardening… or maybe the homemade muffins were a peace offering.

Anyhow, I’ve designated these muffins as our go-to when naps are skipped, flowers are picked, and the joyful screams of Joey and Anthony can be heard around the neighborhood. If you need a sweet and simple reminder of motherhood and love, then these are for you! And thank you to my sweet neighbor for the recipe!

Quick & Easy Homemade Muffins

Recipe type: Snack
Serves: 12 muffins
Ingredients
  • 2 cups flour [I used all-purpose]
  • ½ cup sugar
  • 1 tablespoon baking powder
  • 2 beaten eggs
  • ½ cup oil
  • ½ cup 2% milk
  • Optional: chocolate chips, cinnamon, vanilla, chopped nuts
Instructions
  1. Preheat oven to 400. In a mixing bowl, combine dry ingredients. Add in wet ingredients and stir to combine.
  2. Scoop mixture into lined or greased muffin tins, filling about ⅔ of the way full with batter.
  3. Bake for 17-20 minutes, or until the tops of the muffins are golden.

While these muffins are not the healthiest baked good I’ve ever made, they certainly help with those longer afternoons with the boys. If you were my neighbor, what would you bring a somewhat stressed out Mom of toddlers for a snack?!
