This year I’m hosting Easter dinner and I couldn’t be more excited! I know it seems a little strange that I’m thrilled to be cooking for extended family with my three amigos at home, but the truth is there’s nothing more that excites me than bringing out my recipe book for a holiday feast. While there’s nothing SO new about asparagus as a side dish in my house [family favorite: lemon orzo with asparagus], I’m taking one of our favorite green veggies to the next level with this lemony asparagus.

Simply sautéed and finished off with lemon juice, and Parmesan cheese, this lemony asparagus is fancy enough for a holiday dinner OR everyday weeknight meal. The best part? Everyone in my family likes this recipe as-is. No substitutions. No limits on how much lemon or cheese I use. Mom can be Mom as do as she pleases in the kitchen! Asparagus also makes a great finger-food for Ms. Lily [it’s made her top finger-foods list].

It might not be asparagus season yet in Michigan, but I was pleasantly surprised at the size, color, and price of the asparagus when I picked up our weekly ClickList order from Kroger. Not only do I love knowing that I’m getting a good deal, but I’m also getting the freshest produce around [and straight from Michigan farmers when available]. Roasted or sautéed, you can’t go wrong with this side dish. Just don’t forget the cheese!!!! The men in my house would NOT be happy if that happened….

Lemony Asparagus with Garlic and Parmesan

Serves: 4 servings
Ingredients
  • 1 pound asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 large lemon, ½ sliced and ½ juiced
  • 2 tablespoons Parmesan cheese, grated
Instructions
  1. In large skillet, heat olive oil over medium heat. Add garlic and asparagus. Cooking, tossing occasionally, until tender, 10 to 15 minutes depending on the thickness of the asparagus.
  2. Toss with lemon juice, lemon slices, and Parmesan cheese immediately before serving.
