I grew up in a household where leftovers were rarely served for dinner. My Mom cooked for  my brother, my Dad, and myself, and then Dad would take the leftovers for lunch the next day. Like mother like daughter, I assumed my husband would do the same when it came to leftovers. So, when Ted and I were first married, I couldn’t understand why leftovers piled up in our fridge day after day. “What was Ted eating for lunch,” I would ask myself. Obviously not the leftovers! Don’t tell him but I wasn’t eating them either. Now, after 7 years I’ve finally worked a system that works to prevent food waste with the leftovers AND limit the amount of time I have to spend planning and cooking meals for my crew: using leftovers for another night of dinner. Eureka, Katie! And that my friends, is how I cooked up TWO leftover dinner ideas with these grilled chicken flatbreads.

There’s something beautiful about making a big batch of grilled chicken [here’s my favorite recipe] and using the chicken throughout the week for leftovers. While I’ve been known to use leftover grilled chicken in a variety of ways, I haven’t gone the flatbread route in quite some time. Pita, pizza, flatbread, whatever you want to call it, if I’m serving protein on bread with cheese, my kids are bound to at least try it. And while this Momma loves chicken Caesar salads, I was in the mood to take one of my favorite salads and turn it into a warm pita option! If you haven’t tried warmed Caesar dressing and parmesan cheese, don’t knock it. It’s SO good!

The first WAY to use leftover grilled chicken is with these grilled chicken caesar flatbreads. Layer the sauce, chicken, cooked bacon, and parmesan cheese on the flatbread. Bake at 350 for about 10 minutes or until the cheese has melted. Once you remove the flatbread from the oven, top with the shredded romaine and enjoy immediately! See where the bagged salad comes in handy here?!

The second WAY is grilled BBQ flatbreads. I layered BBQ sauce, chicken, peppers, onions, and cheddar cheese before popping this flatbread into the oven at 350 for about 10 minutes. Just before serving I drizzled ranch dressing over top. Anthony and Lily devoured this version, mainly because of the ranch dressing!

And this guy. This hammy. If you come to my house you’ll be sure to find him somewhere near the fridge or pantry- loving food and life!

I’m hoping I can continue these leftovers for dinner ideas posts because not only are they easy to write and share, they are SO easy to execute at home. And who doesn’t need a little more easy at 5pm?!
