But when this Momma needs something green and clean in her life, I will just make a big salad filled with leafy greens and toppings or mix-in’s I know my kiddos will eat. If you follow me on SnapChat or Instagram, you’ll notice I’m almost always oversharing my family’s lunch and dinner. And that almost never includes a salad. When I feel like Ted and I have had one too many pizza night’s then I add some leafy greens back in the mix. This kale salad is the perfect side to a simple piece of grilled chicken, a lean beef burger, or Anthony’s favorite: hummus and crackers!
