Toddlers and salad don’t always mix. But when this Momma needs something green and clean in her life, I will just make a big salad filled with leafy greens and toppings or mix-in’s I know my kiddos will eat. Like apples and cheddar cheese. That my friends, is the science behind this kale salad with Michigan apples and cheddar cheese.
If you follow me on SnapChat or Instagram, you’ll notice I’m almost always oversharing my family’s lunch and dinner. And that almost never includes a salad. When I feel like Ted and I have had one too many pizza night’s then I add some leafy greens back in the mix. This kale salad is the perfect side to a simple piece of grilled chicken, a lean beef burger, or Anthony’s favorite: hummus and crackers! Just don’t forget the crisp, Michigan Gala apples and creamy cheddar cheese. THAT flavor combination is one you’ll not only enjoy in this kale salad, but sliced together as a snack as well.
