The day I started working for the beef industry was the day that I realized any salad on a restaurant menu can be topped with steak IF you ask! And baby, I’ve never ordered a chicken Caesar salad again! Really… it’s THAT much better! 

It’s no secret that when my children are with Ted and it’s just ME for mealtime, I’m trying to limit the amount of garlic bread, pizza, spaghetti, and pancakes I consume. For me, I look to the ease and taste of one of my favorite combos: steak and salad. If I’m treating myself to a meal out, then I’m ordering a steak Caesar salad or a wedge salad [extra cheese] with steak. And if I’m home, I’m enjoying one of these steak and salad combinations.

Dill Pickle Salad made Maurice Style with Ham, Cheese, and some cucumber. I also topped this with some sliced tenderloin for extra flavor and protein!

Got Beef? Add to Your Salad! 

Beef adds nutrients and flavor to salads- both of which I seem to be lacking when I’m consuming the toddler diet mentioned above [carb-heavy!]. When steak is included in a salad, it provides a meal that is not only rich in iron, but also vitamin B12, zinc, and choline- nutrients shown to positively impact physical and mental health. I don’t need to repeat this paragraph to reinforce the importance of why MOM needs all of those nutrients- heck, my kids do too. I’m pretty sure that’s why Lily asks for beef every night- her body and brain crave it!

The Health Halo with Salads

Salads have what we call in the nutrition world a, “health halo,” meaning they are more often than not considered a “healthy” food regardless of what’s in it. Here’s what I can tell you about salads and MY diet/eating experience: I know on Mom days I’m lacking in the nutritional quality of my meals. Lots of calories. Little nutrients. So I’m striving to focus more on my nutrition on the days the kids are with Ted. Salads allow me to add a lot of color [aka nutrition], control the amount of veggies I consume without pushback [the more the merrier!], and alas, I can add any and all kinds of toppings like lean protein, homemade dressings, and some crumbled feta cheese!
