When You Don’t Feel Like Making Dinner

You’ve been there. I’m usually always there (despite the facade I put on when I share a recipe blog post). Heck I can tell you some nights I don’t want to make dinner even when I’m not the one in charge! 

This past weekend and better half of this upcoming week, Ted is holding down the Serbinski household with the boys. As I mentioned in my newsletter last week, my Aunt Joy lost her battle with cancer, and Lily and I are spending some time with extended family and friends in Knoxville, TN. 

My little travel companion has been a champ so far. The best was Lily’s bright, big smile she gave Joy the time we all had together before her passing.

So far Ted has fed the boys lots of their weekend favorites (pizza, chicken nuggets, Bagel Bites), its back to reality and healthy eating during the week! So here’s a snapshot of meal ideas I sent to him that are no-fuss, no-recipe type of meals. Essentially all the things I’ve been cooking when I don’t feel like making dinner! 

Side note: I did grocery shop before we left for Tennessee so Mr. Mom had a well stocked kitchen. I know he would do the same for me. Second side note: I wrote this post from my phone, so please excuse the photo sizes or typos. Just focus on the simplicity and deliciousness! 

Idea #1: Chicken thighs + salsa in the slow cooker. Mix with your favorite taco or burrito toppings to make it a “bowl.”
Idea #2: Chicken breasts + BBQ sauce in the slow cooker. Onions too if you’re feeling it! Cook and shred, and enjoy with hamburger buns or rolls. We like ours with cheddar cheese and mushrooms too.
Idea #3: Grilled steaks (seasoned with salt pepper and garlic salt) + your favorite roasted veggies! You only need salt pepper and olive oil for those too.
Idea #4: Ok so you can tell I’m a fan of the “roast everything but the kitchen sink” kind of dinner. Roasted veggies + a simple grilled or sautéed protein (chicken sausage here) is my go-to!
Idea #5: Tired of plain old chicken breasts? Top with hummus, bake at 375 for 25 minutes, and enjoy! No really, hummus baked chicken is SO good and easy. And delicious with a side of green beans!

Idea #6: My personal fav, hot dogs with veggie toppers! The kids like their peppers on the side, but Mom and Dad load on the sautéed veggies.

No-brainer meals. I think Mom and Dad need more of those!
