I know what you might be thinking: not another slow cooker chicken recipe! Yes, I’ve gone and done it again. I used to stray from slow cooker chicken recipes that included a simple sauce because to put it nicely the chicken just turned out BLAH. And soggy. And dry. But I think the slow cooking God’s knew this Mom and every busy mom and professional out there needs good slow cooker recipes because our limited time and busy families rely on them. At last, a slow cooker honey mustard chicken recipe was born!
What I love about this recipe is you can pretty much use any mustard you have on hand—- just add a little honey! I’d suggest definitely using a grainy mustard too because it totally packs a flavor punch. Mustard, chicken, a few spices and some broth; that’s IT. It doesn’t get easier or tastier than this one folks. We ate ours on pretzel buns with BBQ sauce and pickles. I also had the leftovers the next day in a flatbread wrap with a little provolone cheese.
And not to jinx this recipe or the next time I decide to make it, but here’s something I just have to share: the whole family ate this slow cooker honey mustard chicken. Yep. - 1.5 pounds boneless, skinless chicken breasts
- ¼ cup chicken broth
- 2 teaspoons dried thyme
- 2 teaspoons onion powder
- 2 garlic cloves, chopped
- 2 tablespoons whole grain mustard
- 2 tablespoons honey mustard [you can swap yellow mustard + 2 tablespoons honey]
- Black pepper to taste
- Add ingredients in slow cooker and mix until combined. Cover and cook on low for 5-6 hours.
- Remove chicken, shred with two forks, and add back to sauce. Serve immediately.
