Since becoming a Mom I’ve realized the importance of having a circle of moms to rely on, talk to, laugh with, etc. You know, a posse that involves the commonality of having children. When I talk to mom pals who have school-age children, I get the general feeling that most feel the same about their kid’s post-school: they are RAVENOUS. Starving!

“We haven’t eaten all day MOM!!” they might shout. I feel their pain because I remember those days, and oddly enough I’m experiencing something similar when my boys wake up from their afternoon naps.

So when Flatout Flatbread asked me to participate in their “Flatout is My Canvas” after-school snacking campaign, I couldn’t resist. The after-school snack is a delicate area for most parents and kids. We know our kids are likely hungry and need fuel to help them do their homework or get through a sports practice, but we don’t want them to spoil their appetite for dinner.

That’s why I think flatbread makes a healthy snack: the whole grains and fiber are filling… but not over-the-top, I’m so stuffed, kind of filling. Plus, they are so versatile. Kids can top their flatbread “canvas” with the foods they love. Did you hear me? Your kids can do the topping, aka make their own snack! That’s a win for mom or dad!

Since every Flatout Flatbread is a blank canvas, it’s a perfect partner to help parents help their kids make healthier after-school choices.  And that’s exactly what I did with this roasted vegetable and hummus flatbread. Now I know there’s barely time to get everyone to extracurricular activities after school let alone time to roast a pan of veggies.

But here’s my trick: roast a big batch of whatever veggies you have on hand over the weekend, store them in an airtight container in your fridge, and reheat for salads, flatbreads, egg scrambles, you name it, during the week! As you can see with our roasted vegetable and hummus flatbread, there’s a hodgepodge of veggies.

They also aren’t perfectly arranged. Why? Joey helped with the arranging! With Flatout, parents can show kids how to arrange the ingredients to make mini masterpieces. And that’s what we were doing… although a lot ended up on my floor too!

Roasted Vegetable and Hummus Flatbread

Recipe type: Snack
Ingredients
  • 1 Flatout Flatbread
  • 2 tablespoons hummus
  • ¾ cup roasted veggies
  • 2 tablespoons of feta cheese
Instructions
  1. Preheat your oven to 375. Layer Flatbread with hummus, veggies, and cheese.
  2. Place on a non-stick baking sheet and bake for 5 minutes. Slice and serve.
  3. You could also microwave the assembled Flatbread on a microwaveable safe plate for 30-45 seconds on high.
