Mornings set the tone for the day in my household. And to say that they go according to plan would be a lie, because let’s face it: life right now is NOT going according to plan for any of us in some way, shape, or form.
Silver lining alert! These daily challenges have given me [the CEO of the kitchen and mealtime negotiations] the opportunity to put even more love and attention into our meals, something I hope my children remember about their Mom someday. That Mom tried her best to make mealtime full of comfort, love, and an occasional Pina Colada smoothie or two.
When it comes to comfort food or comfort cooking as I like to call it, my mind immediately goes to dinner. But the truth is comfort food applies to any time of the day, even breakfast. I guess you could say I was dreaming of a tropical family vacation when I dreamt up this recipe for the Pina Colada smoothie.
Yeah, not happening anytime soon! But the simplicity and reliability of canned foods like canned pineapple and coconut milk offer comfort and support during times of stress and uncertainty. You can relate, right? Cans are the key to making easy, delicious comfort foods, whether you’re in the mood for a classic childhood favorite or something with a modern spin, like Pina Colada smoothies.
Let’s face it: We could all use an easy win these days- and canned foods offer everyday ease, lending themselves to quick and simple “snacks and hacks.” While the kids had their Pina Colada smoothie for breakfast, I saved mine in the fridge for a mid-morning snack.
Keeping a well-stocked “cantry” ensures that my family is eating the recommended cups of fruits and veggies we need each week. Canned foods help making eating healthy more convenient- as I don’t have to make as many trips to the grocery store when I utilize the cans in the pantry. I can also get more creative with my cooking, while cutting down on recipe prep time, leaving more time for my fearless foursome.

- 1 cup canned pineapple chunks or rings
- ¾ cup canned coconut milk
- 1 banana
- ½ cup vanilla Greek Yogurt
- ½ cup ice cubes
- Combine all ingredients in a blender. Blend until smooth, about 1 minute. Serve immediately.
